Frederic Verschoore has taken up the position as Head Chef of the multi award winning Friends Restaurant in Perth’s CBD. Frederic was born and trained in Lyon, France. In the 1980s he worked in the One-Michelin-Star Le Fedora Lyon and Two-Michelin-Star Les Embassadeurs at the Hotel Crillon in Paris before landing the Chef De Partie position in 1993 at the 3-Michelin-Star Troigros Restaurant in Roanne.
Troigros Restaurant is one of France’s most respected restaurants operated by third generation Chef Michel Troigros, who recommended Frederic as Chef to Margaux Restaurant at Kowloon Shanhri-La in Hong Kong. Frederic then spent five years in that vibrant city and met Letitia who was to become his wife.
In 2000 Frederic and his family moved to Japan as he had the position as Chef of Palazzo Restaurant at the Royal Park Hotel in Tokyo, a city where French Food is popular. After six years in working in Tokyo, with an opportunity to own a restaurant in Fremantle, he decided to make his dream come true. With his family they came to Fremantle in March 2006.
The award winning, acclaimed restaurant Great Mellie opened on 11 May 2007 and closed in December 2012 for lifestyle reasons so that Frederic’s wife Letitia could spend quality time with their son.
Chef Frederic brings to Friends Restaurant a brilliant knowledge of classic French Cooking. With this knowledge he creates his own dishes with no traditional heavy saucing. The food is stunningly delicious, yet it is not classical French, nor Oriental, nor fusion, as Chef Frederic calls it “my sytle”.
